No-Bake Vegan Twix Bars

Hey everyone! Before we get into today’s recipe, I have some exciting news to share with you. As I mentioned last time, I’ve been obsessed for several months with the goal of making authentic plant-based cheeses that taste like cheese, that look like cheese, that behave like cheese (i.e. melt, stretch, grate, crumble, etc.), and that you can easily make at home with normal ingredients in under 30 minutes…

It’s been an insane project, but I’m pleased to report that I’ve actually created five totally different cheeses that meet these goals – ricotta, mozzarella, feta, cheddar, and parmesan. So I put together all of these cheese formulas into a little eBook (The Cheesy Vegan eBook) which also includes 21 brand-new recipes that you can make with these cheeses (vegan ricotta ice cream, anyone?). Seriously, I think you guys are going to lose your minds as much as I have over these cheeses and you don’t have to wait much longer…

Now, onto these amazing copycat Twix bars, which have that perfect blend of crunch + caramel + chocolate and they’re made from entirely unprocessed ingredients (almost completely coconut, dates, and nuts).

One of the coolest parts about these bars is the puffed rice cereal. Real Twix bars are built around a crispy shortbread-like cookie. I wanted to use a classic date/nut crust, but that texture is too soft and doesn’t have nearly enough crunch. To solve that, we’ll add some puffed rice into the crust layer and it works really well. Meanwhile, the caramel layer tastes super authentic and it’s made from dates, coconut milk, and almond butter. Even the chocolate is an unprocessed version made with cocoa powder, coconut butter (pureed coconut flesh) and maple syrup. I think you’ll love them:

Makes: 14-16 bars

Ingredients:

  • 1/4 cup coconut butter
  • 2-3 tablespoons cocoa powder
  • 2-3 tablespoons maple syrup
  • 1 teaspoon + 2 teaspoons vanilla
  • 2/3 cup + 2/3 cup dates
  • 1/3 cup almond butter
  • 1/3 cup coconut milk
  • Salt, to taste
  • 1 cup mixed nuts (walnuts, cashews, etc.)
  • 2/3 cup puffed rice cereal

First, line a 9×9-inch baking dish with parchment paper and set aside.

Step One

To make the chocolate layer, combine 1/4 cup coconut butter with 2-3 tablespoons of cocoa powder, 2-3 tablespoons maple syrup, and 1 teaspoon of vanilla in a saucepan and warm until all the ingredients are melted and incorporated. It will likely become very thick and you’ll want to add water (2-3 teaspoons at a time) until it’s the consistency of a thin icing. When it’s ready, spoon this onto the parchment-lined dish as evenly as you can. Transfer to the freezer to firm while you make the other two layers.

Step Two

To make the caramel layer, combine 2/3 cup dates, 1/3 cup almond butter, 1/3 cup coconut milk, a pinch or two of salt, and 2 teaspoons of vanilla in a blender and simply blend until smooth. It’s amazing how much this tastes like caramel! Set aside for now.

Step Three

To make the cookie/shortbread crust layer, combine the cup of mixed nuts, 2/3 cup dates, and salt in a food processor. Process until the nuts are broken down and the mixture is sticky. Then, add in the puffed rice and just pulse several times until it’s broken into smaller pieces and incorporated.

Step Four

Remove the chocolate layer from the freezer. It should be at least semi-firm at this point, which will make it much easier to spread the caramel layer on top, which happens next. Once you have the chocolate covered by the caramel, pour on the crumbly crust and press it evenly into the caramel with a bit of pressure until it sticks. Cover and refrigerate/freeze for at least 90 minutes in order for everything to firm up.

Step Five

Finally, remove from the fridge and cut into bars 2/3 inch wide and about 4.5 inches long. At this point, you have a choice… you can serve as is, with the crust on top – they’re great that way. Or you can make another smaller batch of the chocolate sauce from step one and drizzle on top (as shown) to make them look more authentic and also to help the more crumbly crust layer stick together. Either way, keep refrigerated until ready to serve for the best texture.

  2. This recipe looks amazing and can’t wait to try it. I’ve looked for coconut butter everywhere for other recipes and have never found it. Is there anything that could be used as a substitute?

    • Hmm! Coconut oil is kind of similar but quite a bit higher in fat (because it’s just the oil instead of the whole flesh) and it wouldn’t be a perfect substitute. I might recommend finding a jar of coconut butter online for occasions like this, it would probably be cheaper anyways.

  3. I just made these and they are, in fact, amazeballs. My partner said “you could sell those, babe”. I did not have mixed nuts, so I just did half almonds half cashews.

    I just bought the cheese e-book and all the recipes look super manageable with ingredients I have in the cupboard already- thank you! I am going to make cheese this weekend. Woot!
